What to Do with Extra SCOBY: Kombucha Fruit Leather Recipe
In a blender, puree SCOBY (symbiotic culture of bacteria and yeast) with any liquid it came with. Next, add fruit of your choice, such as blackberries, raspberries, blueberries, or mango. Before adding the fruit to the SCOBY, add a bit of sweeter to the bowl of fruit, such as honey, and heat it up a bit before adding into the pureed SCOBY. (The honey will help with keeping things together while dehydrating.) Puree the fruit and SCOBY together until combined and smooth.
Spread a small amount of coconut oil onto a dehydrator tray. Make sure to use a tray with a solid bottom, as you’ll be pouring a liquid into it. Pour SCOBY-and-fruit mixture onto the tray, just enough that you can spread it across the tray in a thin, even layer. Too much mixture and it won’t dehydrate well; too little and it’ll become brittle. You can also sprinkle spices and seasonings on the top of your spread mixture for an added flavor.
Put the tray into your dehydrator. Consult your dehydrator for where and how to position the tray. Set the time and temperature, and let the mixture dehydrate.
Once done, peel the fruit leather off the tray and cut into strips.
